Mushrooms Risotto (Italian Rice)😊 Perfect healthy and delicious lunch or dinner .

Lets start preparation.🥰 Ingredients:
•300 g Arabia rice
•200 g white button mushroom (you can use any mushrooms)
•40g dried porcini mushrooms (Chopped)
•3 tbsp olive oil
•3 tbsp butter
•1/2 cup dry white wine (optional)
•2 garlic cloves (Crushed)
•7-8 cups chicken stock/vegetable stock
•1 onion (Chopped)
•1 tbsp thyme
•50g grated Parmesan cheese
•1/4 parsley or coriander leaf (Chopped)
•warm the stock over low heat.
•Soak the porcini mushrooms in hot stock for 20 mins,then drain well and keep the liquids.
•Heat 1 tbsp oil in a large pan .stir in the chestnut mushrooms ,and cook until soft,add porcini mushroom and cook 2 min more. •Remove mushrooms and their liquid, set aside.
•In the same pan heat tbsp oil and tbsp butter .
•Add onion and garlic .saute 2 min.
•Add rice , Stirring coat to coat with oil ,about 2 min . •Pour in wine stirring constantly until wine is fully absorbed .
•Add half cup stock and stir until the stock is absorbed.
•Continue adding broth half cup at a time ,stirring continuously.Wait until the stock is almost completely absorbed before adding the next half cup.
•Pour in warm porcini soaking liquids , keep stirring.
•After 14-16 min stir in the mushrooms. Continue adding stock,half cup at a time ,stirring continuously ,until the liquid is absorbed,and the rice is cooked.
•turn off the heat. stir in Parmesan , butter and parsley season with salt and pepper.
